Temperature are soaring high this weekend and specially this sunday I saw people are taking a break from there boring routine to do some kind physical activities. It's nice to see people back on street in this dooms days period. Yes social distancing is the key to fight this Pandemic. Well now we started feeling and taking our life to new direction, taking break to meet our family, chatting with friends and many of you are inclined towards the healthy lifestyle cooking.

Well here I am presenting one drink which is quite refreshing and many people are quite familiar with it - 'Mojito' or 'Lemonade' , but I am giving a little twist and presenting you the most favourite, flavourful, refreshing and street side drink which we call it 'NIMBU PAANI' or 'SHIKANJI' or 'INDIAN MASALA LEMONADE'.

Lets see the Ingredients and preparation technique.

INGREDIENTS (for 400ml glass of water):

1. 2 Green Lemon

2. 1 Inch chunk of ginger (grate it for taking out juice)

3. 1/2 teasp of Black Salt

4. 1 teaspoon of coriander powder

5. 1 Tablespoon of sugar or To skip sugar can add Honey.

6. 1 teaspoon of Roasted cumin powder (key ingredient)

7. 400 ml of water or Soda water

8. Ice cubes as per the preference

9. 6 to 7 fresh mint leaves


1. Take lemon and roll it over the smooth surface with little press to soften it, so that the juices can come out easily. Cut the lemon and squeeze the juice in the glass of your preference.

2. Add black salt, coriander powder, roasted cumin powder, Ginger juice.

3. Take the mint & chopped coarsely or crush gently to release out the mint flavor and then add it to the glass.

4. Add crushed ice cubes as per your preferences. Gently mix the ingredient to dissolve the honey or sugar.

5. Top it up with water or Soda.

Store it in fridge for at least for 4 to 5 days.

Here we go the Masala Nimbu Paani or Masala Lemonade or Indian Mojito. This is so simple but it has some of benefits you may not have known.

  1. Digestion : Lemon are rich in pectin and ascorbic acid both are said to helps in digestion. Specially in summer when we go binge eating, Nimbu paani help in digesting all the food.

  2. Nutrient Boost : Nimbu pani is bomb of nutrients and it is said that Gingerol, the bioactive compound in fresh ginger, can help lower the risk of infections. According to the book, Healing Foods by DK Publishing, "its active constituent gingerol has analgesic, sedative, antipyretic and antibacterial effects."

  3. Natural Coolant : Shikanji or Nimbu pani is a natural coolant especially in summer which helps is balancing the nutrients when temperature soars. It help in preventing the loss of Sodium and Iron due to excessive sweating.

  4. Weight Loss : If you watch the salt content in the nimbupani then this will act as a natural way to reduce weight. Pectin fibers in the lemon helps in 'Weight Loss' during long run if you practice it daily. Lemon juice is a natural cleanser and are having detox properties while ginger has digestion properties, all these helps in weight loss.

I was wondering what to present you for this Sunday Evening dinner, first I thought of adding another non vegetarian dish, then I thought I should present which is common for everyone. So here I have got the Idea to clean ours fridge from veggies which are still lying there but we aren't thought of clearing it off.Here we go, the dish which can be made vegan or vegetarian and of course with chicken, & fish.

'Creamy Coconut Vegetarian Korma

This dish is quite an interesting dish which is very easy to made and you can add any type of veggies whatever you have in your hand. I personally like this dish with Long Grain Basmati rice, but it can be combined with Brown rice or with Quinoa for health conscious people and on the side you can accompany it with Simple Handmade whole wheat Parathas. Many people life it with Naans as well.

This can be made fully vegan by skipping yogurt or cream and can replace it with Soy cream or Soy based yogurt. I am going to present you this dish in very simple and homestyle way so that you guys can make it very easily.





Ingredients :


  • 2 to 3 medium sized potato cut in to medium size, or the size desired as per your liking.

  • Mix of veggies which ever is in your fridge like Mushroom, carrots, capsicum, Tofu (for vegan) else Paneer, Cauliflower, Beans, Corns, and green peas. Any mix of vegetables will do. Trust me guys this is going to be awesome.


  • 1 tablespoon oil (Butter ghee is desirable) - Gives distinct rich flavour.

  • 1 large onion, chopped (Anytype red or white)

  • 1.5 -inch piece of ginger, peeled and chopped

  • 3 garlic cloves, smashed with the back of a knife

  • 500 ml of tomato Puree

  • 1 tablespoon each: curry powder and garam masala

  • 1 1/2 teaspoons each: cumin, coriander, turmeric, & cardamom( 1 black and 3 green)

  • 12 teaspoons sea salt

  • 1/2 teaspoon each: ground cloves, fennel, fenugreek and chili flakes

  • 400ml can of coconut milk

  • 1/2 cup cashews

  • 2 tablespoons lemon juice

  • 1/2 cup yogurt (omit or use vegan yogurt for vegan)

  • 1 tablespoon brown sugar (sub coconut sugar or honey )

  • Top with any or all: cashews, cilantro, lemon, and raisins


  1. Add the potatoes to a medium-sized pot, cover with water and bring to a boil. Let the potatoes boil for 5 minutes then add the rest of the veggies to the pot. Let them boil for another 5 minutes then drain the pot and set it aside. You guys need to make sure that veggies are 80 percent cooked. This can be checked by taking our some veggie and eat it if it has little crunch left then its partial cooked.

  2. While the veggies are cooking, start preparing the vegetarian korma sauce. Heat the oil in a medium-sized pot over medium-high heat. Add the onion and cook, stirring occasionally, until it is soft, about 5 minutes. Add the ginger and garlic and cook for 2 minutes more.

  3. Remove the pot from the heat and add the tomato paste and all of the spices. Stir well then return the pot to the heat. When the spices are fragrant and the tomato paste caramelized, after about 1 minute, add the coconut milk, cashews, lemon juice and 1 1/4 cups of water. Let the pot boil for 5 minutes to soften the cashews.

  4. Blend the curry until it is smooth then add it back to the pot. Add yogurt in the pan over low flame and add brown sugar and sea salt. Cook the curry until yogurt cooked it thoroughly. You can get the typical rich nutty smell once its cooked. Stir the veggies into the curry and cook it for another 5 to 8 mins until veggies cooked it properly and serve immediately topped with any or all of the toppings.

The warmth of clove oil has natural advantages in combination with ginger , cinnamon and black pepper, specially in winter clove can be combined with honey, ginger and light tea which helps in soothing the sore throat. Clove is most important element of 'GARAM MASALA' -the common spice blend of Indians. It has proven that the flavour and essential oil of clove is strong and give relief from toothache.

5. Black Pepper - Practitioners of Ayurvedic medicine – a holistic healing system( over 3,000 years ago, in India – prescribe Black pepper or peppercorn as the tonic for cold and cough during winter. This is because ground pepper is effective at providing relief from sinusitis and nasal congestion, breaking up mucus in the respiratory tract, and helping to expel phlegm deposits from the body.
